Driving around Big Spring, Texas one can get the eerie feeling of being lost in a ghost town. We finally stumbled across Carlos Restaurant. Quite crowded at noon on a Thursday, this is a fairly authentic Tex-Mex restaurant.
We had to scour the menu to find the few veg-friendly options, and eventually settled on a refried beans burrito Ranchero-style, and cheese-stuffed chili rellenos with rice & beans.
Everything was a bit too spicy for my taste, but overall was quite an adequate and filling lunch. It was also a fun place to people watch the locals, many of whom seem to have come directly from a cattle drive or an oil drilling site. This is the real Texas, hombre.
